Someone gave me a giant zucchini the other day and then serendipitously a recipe for zucchini bread popped up in my email from the Food 52 Blog. I baked last night and brought some to class this morning. It was really self-preservation so I didn't eat it all myself. It's pretty good...zucchini, olive oil, yogurt, orange peel, rosemary, pecans. Not super sweet. Delicious with a little Kerrygold Irish butter.
